Located in a protected valley, Tarraford Vineyard has a discreet microclimate, that is cooler than neighbouring sites. A diversity of aspect and clone provides multifaceted winemaking opportunities. The Tarraford Syrah is made from a single, unique clone of Syrah, affectionately known as Red Dog 67.
Hand-picked without additions. The fruit was divided into two components 100% destemmed and 100% whole-bunch. The whole berry component was left to cold soak for four days, then allowed to warm into a wild ferment. The whole bunch component was left in a blanket of carbon dioxide, untouched for a week, before commencing a daily foot stomp (pigeage) with indigenous fermentation commencing as the fruit warmed.
Both components were cross seeded with a Rhone isolate yeast late in the ferment to ensure they finished dry. Pressed at dryness to new and used 500L French puncheons for ten months - 25% new, 75% older. After blending the whole bunch component across the blend was 35% Bottled by gravity with no fining or filtration. Made without animal products.

Single vineyard Yarra Valley syrah, grown on two blocks. The original vines were planted here in 1988. Yarra Valley and shiraz/syrah are a blessed combination. Unfined, unfiltered, lots of whole bunches.
It’s a peppery, floral, twiggy shiraz but the fruit is both jellied and sweet and the tannin, as integrated as it is, is fine-grained-bordering-on-silty. The short review is that it’s a beautiful medium-weight wine. Or maybe this is a better review: a couple of sips and I’d pushed the bottle away from the other review bottles so that it can be consumed later. It’s just a wine you want to drink. It’s pretty and it’s structural and it’s peppery. It flows. It’s juicy. It’s good.

Grapes are drawn from estate and leased vineyards as well as grapes from long-term contracted growers, supported by strong relationships and meticulous supervision throughout the year. Giant Steps wines are produced fastidiously in the vineyard and vinified with minimal intervention so that each wine is a faithful expression of site, vintage and culture.
