The fruit is handpicked at optimum ripeness and flavour profile ensuring overall balance before being gently destemmed to keep as many whole berries and then open fermented for a minimum of five days with the juice being pumped over the skins twice daily to maximize oxygenation and purity of fermentation. Once the wine is dry it is then gently basket pressed minimizing the extraction of harsh extractive tannins.

The Craft The Tomfoolery winemaking philosophy is simple. Small parcels of fruit, hand crafted through a simple and relatively non-interventional approach, with the aim to truly reflect the individual characteristics of the vineyard and variety. Cases are also delivered free of charge, as are any subsequent bottles ordered in addition to the case. The case size is displayed on the product page (i.e. 3, 6 or 12).
If your order is less than 12 bottles, shipping is charged as per your postcode. This charge amount will be visible on the payment page before you confirm and pay for your order.
