Yalumba The Caley Cabernet Shiraz 2012 - South Australia
Bottle size: 750ml
At the time of blending, the winemaking team made the following tasting notes.... Deep garnet red in colour, fruit is at the core of the bouquet, all red and black currants - overlaid with savoury herbs, green spices, cedar and pipe tobacco. The palate is of sophisticated precision with a refined line. Long and textured it captures the concentrated flavours and presents them with a silken grace. Under all that supple, fleshy muscle, the wine has a strong spine, structured to last and last.
14%: This was 52% Coonawarra cabernet, 27% Barossa cabernet, 21% Barossa shiraz (the only one Barossa cabernet was used in). Smells so pretty. So fresh. Scents of salt bush, sea spray, black berries, cassis, violets and rose petals with some faint leather and mahogany going on. Tightly wound, pent up, rivers of tannin and bright acid shaping a wine of structure and tension. Mid palate showing a little flesh but geez this is a wine of firmness and power. Long, mellow finish lasts for ages. Superb wine. Really coming into its zone. 95+ points, to 2035+
This is the first vintage of Yalumbas new Cabernet/Shiraz-based flagship wine. Deep garnet in color, the 2012 Cabernet Sauvignon / Shiraz The Caley offers expressive baked blackberries, cherry cordial and blackcurrant jelly notes with suggestions of Chinese five spice, cedar and anise. The palate is built like a brick house, delivering a solid structure of firm, grainy tannins and plenty of freshness to support and complement the voluptuous, full-bodied flesh. It offers a very long, layered finish with lingering exotic spice and black berry preserves notes. Give it 3-5 more years in bottle and drink it over the next twenty-five. 96+ points.
Bright, deep crimson-purple; the bouquet instantly semaphores a glorious profusion of cassis, blackberry and black cherry fruits, flavours which are precisely mirrored by the palate. But it's the way this beautiful wine caresses the mouth that is so special, the tannins polished, the oak judged to perfection.
Throughout Barossa and Coonawarra, pockets of carefully tended vines have been hand-selected to provide the fruit for our very best and most sought-after wines. Crafted only when all the elements of viticulture and winemaking interact perfectly, our Rare & Fine wines are the very best examples of the varieties and blends that have found a natural home here in Australia during the past five generations.
