Chardonnay runs the gamut of expressions from tight, linear and unadulterated by oak to the big, rich, buttery numbers we see from warmer sites. As we’re in the Huon it’s unlikely we’ll be making the latter anytime soon. We planted four Dijon clones (95, 96, 76 & 277) in two sections of the vineyard over 2 hectares in 2010 where we’d pulled out some Pinot Noir, Nebbiolo, Sangiovese and Sauvignon Blanc – don’t ask...
The idea was to bring some of the best, earlier-ripening, lower-yielding clones to the Huon that would enable us to achieve the flavour, texture and acid components from a cool area that we see in the Chardonnays that we love. Our sandy-loam soils over sandstone and clay, combined with dry-farming and a marginal climate should provide some fascinating wines over the years.

Seeing as it wasn’t the answer we were looking for, we decided to do it anyway. Maybe he’ll be proved right, maybe he won’t but if you don’t do these things in life then you’ll never know and hey, even experts get it wrong sometimes.After meeting in London, we decided in 2005 that we’d had enough of what we were doing. Yes, we were enjoying life but there was always that hollow, unfulfilled feeling down in our souls, so we decided we’d do something we were interested in.
After consulting a shortlist of 3 career categories; wine, Spanish dancing and cricket, only one of those appealed to both of us…so wine it was. We wanted to work for ourselves, be physically and intellectually challenged and produce something we loved and could be proud of together. It was all beginning to sound like the start of a plan.
But how could we get there? You don’t want to just buy a vineyard and wade in straight away. So, we went to France, worked vintage in the Languedoc with three different producers and with the romantic idea of vineyards and winemaking well and truly extinguished we couldn’t have been happier. Step two was signing up to study winemaking and viticulture in Margaret River in Australia.
Gilli did the degree and Paul did the post-grad diploma. The plan was always to get as much and as varied experience as we could in both cellars and vineyards whilst we studied and always with an eye on the goal – the best Pinot Noir and Chardonnay vineyard in Australia. Four years later and having worked in Margaret River, Oregon and New Zealand with some great producers, we decided it was now or never. Maybe we had enough experience, maybe not but you’ve got to take the plunge sometime.

In most instances, a case is 12 bottles, including all mixed cases. Please note that the case quantity can vary between 3-12 bottles, depending on individual wine value and packaging configuration.
The number of bottles that define a straight case is marked in the product pricing page (i.e. "as part of any 6", "single bottle" and "3 or 6 or 12 bottle case").
Where all or part of the order is less than a case (as defined in the product pricing options, or 12 bottles if mixed) shipping will be charged as per your postcode at our cost price, this charge amount will be visible before your order confirmation and payment.
For example, a mixed bottle order of 18 bottles will include a freight charge for the second mixed case of only 6 bottles. A mixed 24 bottle order would be totally freight free.
Our intention is to offer free shipping to as many wine lovers as possible, however, given the geographically vast size of Australia, it is not possible for us to offer free shipping to 100% of postcodes.
