Single Vineyard Shiraz, fruit sourced from ‘Springs Hill Vineyard’, Blewitt Springs, McLaren Vale grown by the Whaite family
Dry Grown, on Maslin Sand, East/West aspect 205-210m altitude.
A vineyard we both have worked with in previous roles and one we were instantly drawn to for our Shiraz. 2019 is our second release of this single vineyard wine.
Hand-picked fruit, fermented in a 131-year-old wax lined concrete open fermenter, 25% whole bunch (foot trodden for tannin extraction from ripe rachis), remainder destemmed. Cold soaked for 5 days, plunged and pumped over during peak of ferment, 23 days on skins. Wine was matured on lees for 9 months in French oak, 10% new.
Fruit condition in our Shiraz was strengthened this season due to better canopy health in the fruiting zone. The higher whole bunch component has complimented the aroma and flavour profile for the Springs Hill site very well offering a black spice and charcuterie component often attributed to Shiraz grown in the Rhone valley. Blue to black fruits with intense perfume and lovely whole bunch spice notes. An intense and lithe palate, primary fruits burst through with intensity across a medium weighted stylish flow all wrapped up tightly by a fine tannin drive.
Our notes
We loved last years debut release of this wine, but stylistically we prefer this 2019. It’s a knockout Mclaren Vale Shiraz, powerful, deep, brooding, dark berry flavours strewn with vibrant lifted violet floral notes that take you to the Northern Rhone Valley in France with just a whiff of St Joseph about it. The mouthfeel is so silky and fine and the absence of excessive new oak I must admit is a relief here. It’s up there with the best South Australian Shiraz we have tried this year. Brilliant winemaking. This is gorgeous!

Producers notes
We were fresh-faced, aspiring young winemakers tallying up the vintage experiences when we met in 2008 at Hardy’s Tintara in McLaren Vale. A connection was formed over long nightshifts, sneaky midnight coffees and love of all things wine.
Many vintages together followed both here in Australia and abroad, but the pull of McLaren Vale was too great and we gave up the nomadic vintage life to put down some roots.
We found our home in Port Willunga, a seaside town in the McLaren Vale wine region, where the afternoons are long, and the glasses full.
After a collective 46 vintages all over the world it was finally time to make a little wine for ourselves and our long-awaited project Paralian Wines was born.
Choosing specific sites for each variety lead us to the northern reaches of McLaren Vale where old inland seas once were, now leaving beach like pockets where our chosen red varieties, Grenache and Shiraz thrive.
Site and vintage expression is our fundamental belief, working with our growers to ensure quality and ideal ripeness is met with balance and varietal expression in mind. To do more, is to do less.

Delivery is currently free of charge for both straight and mixed cases Australia Wide. (*excludes remote postcodes in WA and NT) (*excludes fundraising orders)
In most instances, a case is 12 bottles, including all mixed cases. Please note that the case quantity can vary between 3-12 bottles, depending on individual wine value and packaging configuration.
The number of bottles that define a straight case is marked in the product pricing page (i.e. "as part of any 6", "single bottle" and "3 or 6 or 12 bottle case").
Where all or part of the order is less than a case (as defined in the product pricing options, or 12 bottles if mixed) shipping will be charged as per your postcode at our cost price, this charge amount will be visible before your order confirmation and payment.
For example, a mixed bottle order of 18 bottles will include a freight charge for the second mixed case of only 6 bottles. A mixed 24 bottle order would be totally freight free.
Our intention is to offer free shipping to as many wine lovers as possible, however, given the geographically vast size of Australia, it is not possible for us to offer free shipping to 100% of postcodes.
