AROMA
The Cabernet shines aromatically with notes of blackberry pie and dark chocolate.

PALATE
While the Shiraz fills the mid-palate with black plum and toasty oak. Fine tannins and balanced acidity contribute to an incredibly long finish. The Peake continues to honor the legacy of this iconic Australian blend.

VINIFICATION
The two varieties were hand-picked, destemmed and fermented separately. During fermentation, the Shiraz was plunged three times daily while the Cabernet was pumped over daily. Both varieties were left on skins for a minimum of 18 days and gently basket pressed. The Cabernet matured for 15 months in fine-grained Bordeaux coopered barrels while a mixture of puncheons and barriques were used for the Shiraz. In total, 50% of the French oak was new. The finest barrels were selected and blended together shortly before bottling.

MATURATION
Rack and returned three times during the maturation of 15 months 100% new oak, Shiraz Burgundy coopered French oak, Cabernet Bordeaux coopered French oak.

From vines planted in '71. Hand-picked, destemmed, fermented separately on skins for 18 days, matured for 15 months in high quality French barrels. The best shiraz and cabernet are selected to showcase this long-time Australian blend. If there's a better one, I haven't seen it. This is a beautiful wine, red and black fruits holding hands as they so brilliantly throw off the shackles of the hot vintage. Halliday Wine Companion, 1 August, 2020

Wow, this is a phenomenal expression of this majestic Clarendon vineyard and is aptly named as the pinnacle of the range. The intersection of cabernet sauvignon and shiraz is so seamless, a selection of the best (and oldest) parcels form this blend. The fact they are both grown in the same contoured vineyard cements a deep bond in this wine. Dark cherries, blackberries, mulberries and blackcurrants with a gently leafy edge. The oak is perfectly integrated. Power and precision on the palate. So well defined and brightly flavored with raspberries, red plums, blackberries and a deeper, black-cherry and dark-plum build into the finish. Just superb. The Wine Front
It’s a seriously good wine. Its volume and silken mouthfeel announce themselves from the first sip but then the long chains of tannin, tobacco and dust and floral-like highlights, and compelling length serve to seal a quite wonderful deal. This is hearty, full-bodied Australian red wine in all its glory. It’s built on redcurrant, plum, blackcurrant and cloves and the mouthfeel/length combination here is really quite something. 96+ points.

The Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham vineyard has become an integral part of Australia’s wine heritage, supplying fruit to produce many of Australia’s greatest wines. Delivery is currently free of charge for both straight and mixed cases Australia Wide. (*excludes remote postcodes in WA and NT) (*excludes fundraising orders)

In most instances, a case is 12 bottles, including all mixed cases. Please note that the case quantity can vary between 3-12 bottles, depending on individual wine value and packaging configuration.

The number of bottles that define a straight case is marked in the product pricing page (i.e. "as part of any 6", "single bottle" and "3 or 6 or 12 bottle case").

Where all or part of the order is less than a case (as defined in the product pricing options, or 12 bottles if mixed) shipping will be charged as per your postcode at our cost price, this charge amount will be visible before your order confirmation and payment.

For example, a mixed bottle order of 18 bottles will include a freight charge for the second mixed case of only 6 bottles. A mixed 24 bottle order would be totally freight free.
