Harvest time: middle of October.
The fermentation lasts some 25 days according to the vintage with daily pumping over of the wine mass with délestages at half of the period (fermentation in concrete tanks).
The aging is conducted in 25 or 50hl large barrels of Fontainebleau Forest oak (from 18 to 36 months according to the vintage)
Perfumes: Elegant and neat; craft jams, wild herbs, chocolate.
Taste: powerful and yet soft as well as its tannins; embracing sensation with a good fruit imprint, long-lasting finish.
Pairings: long cooking red meats, outstanding with truffled pheasant.

Lavish sweet spice and rosy perfume, red berries and cherry, almond paste and mint. Full-bodied, but fresh, succulence of red fruit and almond, almost sweet, but firm chalk dust tannin, inner perfume of flowers and bergamot tea, maybe liquorice root, and a very long finish that makes you think of warm bricks and stony things. The Giovanni Rosso 2016 Barolo Cerretta is a tight, focused and high-energy expression of Nebbiolo. Red and purple fruit aromas of cassis, dried cranberry and cherry provide pretty highlights, but ample space is given to those equally pretty aromas of licorice, campfire ash and candied orange peel that so deftly play supporting roles. To the palate, this is a glossy, polished wine with enough tannic kick to carry it forward for another 10 or 20 years of cellar aging. The Wine Advocate, 24 July, 2020

Where all or part of the order is less than a case (as defined in the product pricing options, or 12 bottles if mixed) shipping will be charged as per your postcode at our cost price, this charge amount will be visible before your order confirmation and payment.
For example, a mixed bottle order of 18 bottles will include a freight charge for the second mixed case of only 6 bottles. A mixed 24 bottle order would be totally freight free.
