The grapes were harvested earlier than normal to maintain the bright fresh varietal characteristic. They were destemmed, must chilled and then pressed after which the settled juice was racked and fermentation was initiated. Fermentation was then monitored and temperature was maintained between 13 - 16 C to allow for a steady ferment. Once the baume level had dropped more than 2/3 of its value, the Residual Sugar was then regularly measured as we were aiming to hand bottle and cap at 12.5 grams/litre of Residual Sugar. The wine then lay down before being released in July 2019.
Mudgee is 520 - 570 meters above sea level and produces grapes that are more savoury and structure in style. This is due to the warmer climate, where the mean January temperature is 23.5°C, and the average rainfall is 600mm per annum. The soil in Mudgee is predominately clay loam, which is deep and well drained, with underlying shattered rock and quartz being found.
Gilbert was established in 2004 by fifth generation winemaker, Simon Gilbert. They have always had a strong desire to do things their own way and create a label true to themselves, at the same time paying tribute to their heritage. Since taking the reins in 2014, sixth generation winemaker Will Gilbert, with more of a hands off approach, has begun pushing the boundaries a little more whilst playing around with different techniques and ideas, constantly experimenting….mixing things up a little! Sourcing fruit from the cool-climate region of Orange and also Mudgee, the Gilbert style of fine, pure and elegant wines is an ever evolving range of wines.

In most instances, a case is 12 bottles, including all mixed cases. Please note that the case quantity can vary between 3-12 bottles, depending on individual wine value and packaging configuration.
The number of bottles that define a straight case is marked in the product pricing page (i.e. "as part of any 6", "single bottle" and "3 or 6 or 12 bottle case").
Where all or part of the order is less than a case (as defined in the product pricing options, or 12 bottles if mixed) shipping will be charged as per your postcode at our cost price, this charge amount will be visible before your order confirmation and payment.
For example, a mixed bottle order of 18 bottles will include a freight charge for the second mixed case of only 6 bottles. A mixed 24 bottle order would be totally freight free.
Our intention is to offer free shipping to as many wine lovers as possible, however, given the geographically vast size of Australia, it is not possible for us to offer free shipping to 100% of postcodes.
