Age of the vines: from 10 to 30 years old
Soil composition: calcareous but also very sandy
Exposure: various, east, north - east
Vinification: Maceration on the skins for approx. 3 to 4 days in rotary fermenters with temperature control, short passage in used French barrique for 5 months
Color: ruby red with violet reflections
Nose: Aromas of violets and black cherry.
Taste: warm, full bodied, with the right acidity, nice long taste of dark red fruits
Serving suggestion: antipasto, pasta course, fatty cheese and salami
PHILOSOPHY OF LIFE AND WORK
Our wines are simple and natural, and we would like you to know that:
vineyards are cultivated without the use of any chemicals or pesticides (unless it’s strictly necessary) or any other substance that might interfere with the cycle of the vine or of the grapes growing.
We only use copper and copper sulphate, and we fertilize with organic cow manure.
During the alcoholic fermentation we don’t inoculate with yeast, we only use our indigenous yeasts, to this follows a natural malolactic fermentation.
We don’t filter or clarify the wine.
We don’t use any substance that could modify the colour or the structure of the wine.
The sulphur level is way lower than what the Italian government would allow us to use.
We don’t apply biodynamic or similar methods, we simply work the vineyards and the vines how they have been working them for hundreds of generations.
Our first goal is our health and the health of the people that work with us, respecting the land and environment, because it’s from the vineyards that we get our only profit.
The landscape is the only patrimony that we get from our parents, and we have the duty and the moral commitment to preserve it as much as we can to be able to pass it to the next generations.

In most instances, a case is 12 bottles, including all mixed cases. Please note that the case quantity can vary between 3-12 bottles, depending on individual wine value and packaging configuration.
The number of bottles that define a straight case is marked in the product pricing page (i.e. "as part of any 6", "single bottle" and "3 or 6 or 12 bottle case").
Where all or part of the order is less than a case (as defined in the product pricing options, or 12 bottles if mixed) shipping will be charged as per your postcode at our cost price, this charge amount will be visible before your order confirmation and payment.
For example, a mixed bottle order of 18 bottles will include a freight charge for the second mixed case of only 6 bottles. A mixed 24 bottle order would be totally freight free.
Our intention is to offer free shipping to as many wine lovers as possible, however, given the geographically vast size of Australia, it is not possible for us to offer free shipping to 100% of postcodes.
