Dr Edge Tasmania Chardonnay is a blend of Tamar Valley & Derwent Valley fruit. Pressed to old oak casks, the juice is fermented naturally, matured for 9 months on lees with some casks containing small amounts of whole Chardonnay fruit clusters. Bottled without any fining agents.

Tamar Valley & Derwent Valley grapes. Older oak. No North, South, or East in 2021. So I guess this is North & South. This is kind of how Chablis should be, given a whole lot of it these days is too ripe and gluggy.
Saline, white peach, honeyed almond and green apple, a little unmami something, maybe some preserved lemon. Tight, brisk, but has flavour, a lot of flint through a glossy texture, wheatgerm and brine, sour apple tang, intense and long. Lip-smacking and energetic, yet already complex. Wonderful wine.
